2015: Day 11
Usually we pick the event or memory, and then craft a drink around it, but not this one. My cousin Andrea suggested I make this drink for the 12DOD and I immediately thought it reminded me of my trip to Alaska in May. And of course you don’t say no to a pregnant lady (congrats on your new baby boy by the way!).
Last fall I was thinking that it would be a nice idea to take my mom on a cruise to celebrate her 80th birthday. My mom, sister and I ended up booking a 7 day Holland America cruise in May over Mother’s Day. We booked based on timing and itinerary and it was just perfect that it was a Dutch cruise line since Mom was born in Holland! I was a little worried about whether all that estrogen could survive a week together in a single suite, but we survived and ended up having a lot of fun together.
Our ports of call included Juneau, Skagway, Glacier Bay and Ketchikan. While we were in Skagway, we took the White Pass train which nostalgic for Mom since she returned on it when she hiked the Chilkoot trail about 10 years ago. We got to see a lot of different sights, shared a lot of laughs, and created memories that I know will stick with me for a long time.
I’m very lucky to have my mother with me at 80, as I know many of my friends and family have not had that opportunity. I’m also happy that she is very active, eats healthy and does a lot of community service work to keep her brain engaged, so I’m hopeful that we will be celebrating many more birthdays to come. This drink is in celebration of mothers everywhere, whether living or those who have already left us.
The drink is based on a “Jack Frost” cocktail. Ours was a bit more green than the original recipe since Joel reaaally likes fresh pineapple. Thanks to my friend Chantal who pre-tested the drink for me and gave me some tips on what worked best. I don’t know how closely Joel followed the recipe since he’s more of a “throw stuff together” kind of guy.
Original drink credit:
Jack Frost cocktail ~ 1 cup pineapple juice, 1/2 cup blue curacao, 1/2 cup light rum or vodka,1/2 cup cream of coconut, ice Blend (in blender) until slushy. Serve with flaked coconut rim.
