2018: Day 2
Milestones!! Who doesn’t love milestones? Special birthdays, anniversaries, graduation … all reasons to celebrate and remember. But of all the different milestones we’ll face in our lives, is there any as special and awesome as retirement? I don’t think so. Imagine a world where the only obligations you face are self-induced; no more dragging your sorry butt out of bed to work for ‘The Man’. All 24 hours are filled anyway you want.
Two of our friends, Lucy and Fay hit this special milestone this year. It was fun watching their countdown on Facebook – Lucy slowly getting through her candy jar one day (candy) at a time until the jar was empty. Fay’s countdown was a little less calorie intensive – simply a yellow sticky at her desk with the number of Mondays remaining. Today’s drink is a celebration of their lives just beginning.
Neither of these ladies is destined for a rocking chair any time soon. Both are endurance athletes with at least one more Ironman in them (I think Lucy said just one, but I’m betting there’s at least a couple in her). We thought long and hard about what should be in this drink. Considering they are still extremely active, we figured they needed a drink with a boost. Warning: this drink is really, really, really odd but it actually does work. The two key ingredients are beet juice and tart cherry juice. Yup, you heard it right. Beets are kinda like a healthy good version of blood doping. When the natural sugars hit the blood stream, kabam! Tart cherry juice is a wonderful anti-inflammatory – a great recovery product. And it helps take the earthy edge off the beet juice. Coffee sprinkles on top add that necessary caffeine to kick off a 6:00am swim. Because … we all need a cocktail before swimming?? And it has Sambuca! And vodka! Because a drink with just Sambuca would be silly. And then tack on some cinnamon simple syrup, and a vanilla yogurt & egg white foam on top. I have no idea how but somehow this crazy mixture works.
Of course this drink *must* be served with a small handful of Lucy’s infamous licorice countdown candies and a yellow sticky to remind Fay how many days it’s been since she started her new life.
